INGREDIENTS:

  • 1 large block of firm tofu

  • 1/4 cup soy sauce *

  • 1/8 cup vinegar

  • 1 tbsp maple syrup

  • 2 heaping tsp ground black pepper

  • Himalayan salt, to taste

  • Couple of whole black peppercorns

  • Equal amounts of

    • Ginger powder

    • Garlic powder

    • Paprika powder

*Double check to make sure that the soy sauce is both vegan and gluten-free. Many soy sauces are not gluten-free.

HOW TO

In a large pan bring the olive oil to a heat. Slice up the tofu and add to the pan with the heated oil.

Fry equally on both sides. Using a peppermill, crack some black pepper on top.

In the meantime prepare the black pepper sauce by whisking together the soy sauce, vinegar, maple syrup, ground black pepper, ginger powder, garlic powder, paprika powder, and a couple of whole black peppercorns.

Once the tofu is fried on both sides, pour the black pepper sauce over it, diffuse with a tiny bit of boiling water, and cover with a lid. Leave to simmer on a low heat for about 10 minutes, so the tofu can absorb all the flavors.

If you have any leftovers, great! It tastes even better the next day.
