Apple Pie Oats

Time to prepare: 5 minutes
Serves: 1

What you will need:
1/2 cup oatmeal (steel cut oats)
1 cup water 
1 tbsp maple syrup
1/2 apple
Raisins
Mix of nuts
Pumpkin seeds
Hemp seeds

 

How to prepare it:
Bring the oatmeal to a boil in the water. Add in the maple syrup and stir occasionally. Dice the apple and once the oats are done start plating. Top with the apple, raisins, and pumpkin seeds. Add in a few nuts ánd hemp seeds for extra healthy fats (they are low in saturated fats). Hemp seeds are also a great source of protein, fiber, and of essential fatty acids. You can even add cinnamon to give it that extra apple pie taste. Other great toppings to add are coconut shreds, banana, frozen blueberries, and a nut butter instead of the fresh nuts! Enjoy!

Wholesome Nuts & Seeds Bread

Time to prepare: 1,5 hours (including baking time!)
Serves: 10 slices


What you will need:

1 and 1/2 cup oatmeal 
4 cups pumpkin seeds
1/2 cup flaxseeds
1/4 cup almonds
1/4 cup cashews
2 tbsp chia seeds
2 tbsp coconut oil
1 tbsp maple syrup
1 heaping tbsp cumin seeds
Pinch of Himalayan salt
350 ml lukewarm water


How to prepare it:
Start by placing the oats in a blender, and blend so the mixture gets flour-like consistency. Next, add in the flax seeds, and blend again. Once everything has the same consistency, remove from blender and add into a large bowl.

To this bowl start adding the other dry ingredients: pumpkin seeds, almonds, cashews, chia seeds, cumin seeds, and Himalayan salt. Use cumin seeds instead of ground cumin for the yummiest tastes. Give everything a good mix.

Melt the coconut oil, so that it becomes liquid. If you live somewhere nice and tropical, skip this step since the oil will most likely already be liquid. Next, add in the wet ingredients: the melted coconut oil, maple syrup, and water. Mix again.

Line a cake pan with some parchment paper. Add the batter to the cake pan and really press it down firmly. Smoothen the surface, and allow it to sit in the fridge for about 30 minutes.

Remove the cake pan from the fridge, and place it in a preheated oven. The oven needs to be heated to 180°C (380°F), and then allow the bread to bake for 40 minutes. Then remove the bread from the oven, and let it cool for approximately 5-10 before removing it from the cake pan.

Enjoy this yummy wholesome bread with some hummus or guacamole, or any other toppings of preference. It is super easy to prepare, and you can even store it in the freezer (after slicing) for super convenient, healthy, and fast breakfasts or lunches.

Serves: 10-15 slices


What you will need:

For the crust
2 cups oats
4 tbsp maple syrup
4 heaping tbsp vegan organic peanut butter*

 

For the creamy layer
1,5 cup cashews (soaked overnight)
2 tbsp coconut oil (melted)
1 can coconut milk (400 ml)
2 tbsp maple syrup

​

For the topping
Little bit of the crust (crumbled)
Vegan organic peanut butter*

 

This cheesecake is raw, gluten-free, has no processed sugars, and is vegan. All this ánd yummy?! Absolutely. Try it for yourself.

How to prepare it:

Start by blending the oats in a food processor, so it becomes the “flour” for the cheesecake. Next, add in the maple syrup and peanut butter and blend until it becomes a dough-like consistency. This will be the crust.

Line a cake tin with parchment paper. Start to add the crust to the tin, but leave a little bit of the crumble and set it aside, to sprinkle on top of the cheesecake at the end. Press the crumble in the cake tin down firmly and evenly and place in the freezer. 

​

Next, start making the creamy layer. Combine all the ingredients for this layer in a high speeds blender. Mix for about 2 minutes, so that it becomes nice and creamy. Pour this cream into the cake tin and freeze for about 2 hours before serving.

​

Right before serving the cheesecake add a little bit of peanut butter and sprinkle the leftover crumble on top.

 

*Make sure to search for an organic peanut butter that has no added sugars and fats. Peanut butters often have many unnecessary added ingredients, so we prefer to use one that has 2 ingredients: peanuts and a tiny dash of sea salt.
